Phase IV – Peel processing
The skins, previously calcitated in order to facilitate the preservation, are reversed into a specific tank, consisting of an elevator belt able to move them to the next phase of selection and washing. The obtained product is transformed into cubes by dicing machines, vibrating screen and sieves. The cubes obtained are brine stored inside special fiberglass tanks, waiting to be put on the market.
